I will tell you. I am the queen of perfect grilled cheese.

Use a good frying pan with a lid. The lid is crucial. Warm up the pan to just above medium heat, with the lid on. While you’re waiting, butter two pieces of bread with room-temperature butter, and prep your cheese. The cheese works best if it’s thickly grated, but small slices or chunks work okay too.  It’s also best to use a hard cheese (like sharp cheddar) with a not-so hard cheese (like mozzarella).  Put one slice of bread in the pan, butter side down, quickly spread some cheese on (how much is up to you, but don’t be stingy…the point of grilled cheese is obviously the cheese), and put the other slice of bread on top. Cover the pan with the lid again, and wait two minutes, flip the sandwich, and wait two more minutes. If it’s not quite brown enough, cook another minute or so on each side. Voila! Sandwich perfection.

If you’re feeling daring, adding some sort of spread, fruit, meat or veggie can take your sandwich to the next level. I like pesto and tomato. My sister likes bean dip and burger. Spicy mustard and shredded turkey is pretty great too. Add the spread as you place each piece of bread, and the fillings between two smaller layers of cheese so it melts together well.
